  • Total Time: 25 minutes

Instructions

  • Blend the banana and spinach in a blender until smooth.
  • Whisk together the flour, baking powder, and salt in a mixing bowl.
  • Mix the milk, egg, honey, and vegetable oil into the dry ingredients until smooth.
  • Mix in the banana-spinach puree until well combined.
  • Preheat a nonstick skillet over medium-high heat.
  • Pour the pancake batter onto the pan using a 1/4 cup measure.
  • Cook for 2-3 minutes, or until surface bubbles form.
  • Cook for another minute, or until the pancake is golden brown.
  • Repeat with the rest of the batter.
  • Serve warm with maple syrup or other desired toppings.
