Peanut Butter and Blueberry Pancakes Recipe

Instructions

  • In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt.
  • Separately, whisk together the egg and milk.
  • Mix in the creamy peanut butter until thoroughly combined.
  • Mix the wet and dry ingredients together until just combined.
  • Blueberries should be folded in.
  • Warm a nonstick skillet or griddle over medium heat.
  • For each pancake, spoon 1/4 cup batter onto the pan or griddle.
  • Cook for 2-3 minutes, or until bubbles form on the surface and the edges appear set.
  • Cook for another 1-2 minutes, or until the pancake is golden brown.
  • Repeat with the remaining batter, adjusting the heat as necessary.
