Instructions

  • In a large mixing bowl, combine the flour, sugar, baking powder, and salt.
  • Whisk together the milk, peanut butter, and egg in a separate bowl until well combined.
  • Mix the wet and dry ingredients together until just combined.
  • Incorporate the mashed banana and blueberries.
  • Preheat a nonstick skillet over medium heat.
  • When the pan is hot, use a 1/4 cup measuring cup to scoop the batter onto it.
  • Cook the pancake until bubbles form on the surface, then flip and cook for another 1-2 minutes, or until golden brown.
  • Repeat until all of the batter has been used.
  • Warm pancakes can be topped with extra blueberries and peanut butter if desired.
