Instructions

  • Whisk together the flour, granulated sugar, baking powder, and salt in a large mixing bowl.
  • Whisk together the milk, egg, and melted butter in a separate bowl.
  • Mix the wet and dry ingredients together until just combined.
  • Avoid overmixing.
  • Melt 2 tablespoons butter in a large nonstick skillet over medium heat.
  • Cook for 1-2 minutes, or until the brown sugar has melted and become bubbly, over the melted butter.
  • Arrange the chopped pineapple and sliced strawberries in the skillet over the brown sugar mixture.
  • Spread out the pancake batter evenly over the fruit in the skillet.
  • Cook the pancake on one side for 3-4 minutes, or until the edges are set and the top is bubbly.
  • Flip the pancake carefully and cook for another 2-3 minutes on the other side.
  • Remove the pancake from the skillet and set aside to cool before slicing and serving.
