These light and fluffy pancakes are topped with sweet strawberries and blueberries and drizzled with rich maple syrup. This recipe is ideal for a weekend brunch or a special breakfast treat.

Instructions

  • In a large mixing bowl, combine the flour, sugar, baking powder, and salt.
  • In a separate bowl, combine the milk, egg, and melted butter.
  • Stir together the wet and dry ingredients until just combined.
  • Over medium-high heat, heat a nonstick skillet or griddle.
  • For each pancake, pour 1/4 cup batter into the skillet.
  • Cook for 2 minutes, or until the edges begin to dry and the top is bubbly.
  • Cook until the pancake is golden brown on the other side, about 1-2 minutes.
  • Repeat with the rest of the batter.
  • Serve the pancakes with sliced strawberries, blueberries, and maple syrup on the side.
