Ingredients

• 1/2 teaspoon salt
• 1 egg
• 1/2 cup grapes, halved
• 2 tablespoons brown sugar
• 2 tbsp honey
• 1 cup of milk
• 1 teaspoon pumpkin pie spice
• 1 kiwi, peeled and sliced
• 1 cup all-purpose flour
• 1/2 cup pumpkin puree
• 2 tablespoons vegetable oil
• 1/2 teaspoon baking soda
• 1 teaspoon baking powder
• 1 banana, cut in half

Instructions

• Whisk together the flour, brown sugar, baking powder, baking soda, salt, and pumpkin pie spice in a large mixing bowl.
• In a separate bowl, combine the egg, pumpkin puree, milk, and vegetable oil.
• Mix the wet and dry ingredients together until just combined.
• Cooking spray lightly coats a nonstick skillet over medium heat.
• For each pancake, pour 1/4 cup batter into the skillet.
• Cook until the bubbles cover the surface of the pancake and the edges are slightly dry, then flip and cook until the other side is golden brown.
• Serve pancakes with sliced kiwi, banana, grapes, and honey drizzle.
