  • Whisk together the flour, brown sugar, baking powder, baking soda, salt, and pumpkin pie spice in a large mixing bowl.
  • In a separate bowl, combine the egg, pumpkin puree, milk, and vegetable oil.
  • Mix the wet and dry ingredients together until just combined.
  • Cooking spray lightly coats a nonstick skillet over medium heat.
