Chocolate Pancakes with Mini Marshmallows Recipe

Ingredients

• 1 teaspoon baking powder
• 1/2 teaspoon baking soda
• 2 tbsp cocoa powder (unsweetened)
• 1 egg
• 1 cup all-purpose flour
• 1/4 teaspoon salt
• 2 tablespoons granulated sugar
• 1 cup of milk
• 2 tablespoons unsalted butter, melted
• 1/2 cup mini marshmallows

• Cook Time: 20 minutes
• Total Time: 30 minutes

Instructions

• Whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt in a medium mixing bowl.
• Whisk together the milk, egg, and melted butter in a separate bowl.
• Stir together the wet and dry ingredients until just combined.
• Cooking spray lightly coats a nonstick pan over medium heat.
• For each pancake, pour 1/4 cup batter onto the pan.
• Before flipping, sprinkle a few mini marshmallows on top of each pancake.
• Cook for 2-3 minutes per side, or until the edges are set and the tops are bubbly.
• Repeat with the remaining batter, sprinkling with more cooking spray as needed.
